Would it be possible to display the match history with win percentages (total, as black, as white etc.) on your opponents as you play them?
Yes, but I think win percentage is quite irrelevant. Someone who plays against weaker player will have a high win percentage. That's why the ELO is a better strength indicator: it takes the opponent ELO into account.
Maybe I was a bit unclear. I'm talking about displaying your win percantage against your current opponent.
Example. ChessSystem vs Larry (5,5-2,5)
Win: x% as black, x% as white, x% total

I like this idea. Also, it would be nice to show the total number of games played by my opponent against everybody (not the number of wins or losses, just the total). I like to know if the ELO of my opponent is based on many games or not. This the main reason why I check my opponent's page while playing.
Well actually another reason that I want to know how many games my opponent has played on lichess is because I want to know if they are new to the site.
Also, as for not cluttering the UI for the OP's idea, if it only displays in the game window at the time of the match, maybe it could go right between the player info and the game info, i.e.:
<W> player_1 (1278)
<B> player_2 (1327)
stats: player_1 vs. player_2
clock 1+2, rated

Maybe those quick-reference player stats could show total games as well, but idk, seems like then it might get cluttered...
How about displaying the stats in a small "mouseover popup box" when putting the cursor over your opponent's name?
I was thinking something along the lines of Wulfsige's idea; perhaps a line graph or something? I also like ChessSystem's idea of a mouse over.
My two cents is to have 2 buttons on the match details box, one of them will show the match details in that area, the other would show the details of you vs. your opponent. This would allow more information to be shown, i.e amount of games against opponent, date last played, win-rate against opponent (as black and white, and total), frequent openings against opponent (as black and white), like a full break down of the specs. There is a lot of information that can be displayed, maybe you could also show similar games against your opponent as per the one you are playing right now.
A very rough look at my proposition. Of course it would be made to suit lichess' style a whole lot more; the table of frequent openings could be done a whole lot better, maybe even allowing the user to click on the opening and view those games (expanding a list below the opening name, at the same time the <div> would probably become auto-scroll).
