Opening training

Hello,
I would like to train a new opening and I would like to use a program to play it against me. But it seems (Fritz for example) that it is not possible to adjust the level of a program and also to ask him to change slightly his moves in the very opening phase (so that if I play various games against him, I could test various variations).

Do you know any good software allowing me to train like this?

Play against the maximum level. That makes you better.

There is possibility to change the level in this site's play against the machine mode. You can set a position and play from there.

EDIT: Wow you are 2200+ Blitz. The maximum level seems to reflect the reality.
